Willa’s Apple Cake

This is probably THE most requested recipe in 20 years of serving breakfast.  It’s easy and requires basic stuff most of us have on hand all the time.  Willa is my brother-in-law’s mother, who lives in Indianapolis, and at 86 is still baking fabulous cakes and cookies.

Stir together (don’t use a mixer, it will make the batter tough)

  • 1 c. oil  (I use canola)
  • 2 c. sugar
  • 1 t. vanilla
  • 2 eggs

Then add:

  • 2 c. flour
  • 1 T. cinnamon
  • 1 t. salt
  • 1 t. soda

Stir, then add:

  •  2-3 c. diced or grated apples (3 to 4) (I like granny Smith best, but it’s a great way to use apples that have gotten a little “wiggly.”)
  • ½ c. chopped walnuts (if desired)

Pour into a sprayed 13”x 9” baking dish.

Bake at 325 for 45 minutes.  Can be served warm or cold. Doesn’t need frosting.
